I'm determined to get back on plan this week. I fasted most of the day and ate all of my food between 5:00 and 9:00 pm. I haven't gotten on the scale, but can tell I've gained a few lbs by how my clothes feel.
Breakfast - black coffee
Lunch - none
Snack - pork rinds
Dinner - scrambled eggs with cheese and turkey sausage
Snack - green tea, jello with mascarpone cheese

Hi everyone....thanks to Pam for reminding me to check in!! I'm here and on plan. YAY. Today I've had a tough time with my mind wandering to lots of yummy carbs, but I've done okay. I've been on plan for a week or so, I guess, so I'm not sure why today is so rough. I hope your cravings aren't as bad today. I hope mine aren't as bad today too! I kept my carbs within my desired range yesterday, but I would be embarrassed to tell you how many of those carb grams came from chocolate! It was just one of those days.

And about the Almond Coconut Gelatin....I don't care for it. To much fake almond flavor for me. I think I might like it better with hazelnut instead of almond, but that's just a personal preference. My daughter on the other hand said she liked the flavor but not the texture. My husband said "I'm not eating that" and wouldn't even taste it. So there ya go. Not exactly a roaring success.

Thanks, Greta! Yeah my carbs yesterday came from two mini hershey chocolates, some almonds, and sugar free peanut brittle. I figure my day yesterday had the potential to be much worse. Lol

Well you find something that you like Gretalyn to increase your gelatin consumption, it is so inexpensive it could be worth the few minutes it takes to make it for yourself. I am enjoying the fruity flavor of mine. The first batch was too hard, this last batch wasn't quite chewy enough. I keep making the same recipe--fiddling with the gelatin proportions to find what I want for texture.
Kristin! Yea! Remember that what shows up on the scale today is not in direct proportion to what you ate yesterday. The body is a very complex system which doesn't work the way we've decided it does, or ought, as it regards to food and liquid intake.
I am off the scale for a few days. Not because I've done something I don't want to see, but because I don't want to get on it. Ha!

Hi everyone! I've been gone awhile but I'm about to buckle down again. Here's the scoop. Started the HFLC WoE on March 21. Did it faithfully for about 5-6 weeks then got sick with a nasty cold. Kinda said 'screw it... I want some ice cream for my sore throat' but not totally - upped my carbs to over 50 but under 100. I've been keeping it at that level since the beginning of May (except for last night which was my eat whatever the heck I want day... not going to step on the scale for about a week. LOL). I was an idiot and didn't weight myself the day I started the WoE but at the least I've lost 11 pounds and at the most 14. One more pound and I'll be in the 160s... something I haven't seen for YEARS!!! My energy levels are definitely better; less knee/back pain, etc. The most amazing thing is that I was never hungry! This WoE is definitely the best! I'm encouraged that I've been maintaining but not gaining with the higher carbs. The extra allowance is definitely a WoE that I could maintain nearly forever. The 50 or less... not so much. So amywhoodle - today is the first day of my 2nd round of weight loss. I am only planning on sticking with the 50 or less for another 10lbs... then another break but I'm definitely super motivated with this last bit of success!

I had coffee and a protein shake for breakfast and chicken salad for lunch today. I'm home from work now, and waiting until traffic dies down a little before I go to the grocery store and figure out what to make for dinner. Maybe I'll eat some gelatin as a snack first.

Today's log. 1242 calories, 92 g protein, 81 g fat, 32 g carbs.
Breakfast - coffee blended with protein powder, almond milk, and coconut oil.
Lunch - chicken salad and tortilla strips. I managed to stick to a reasonable portion, and not eat the whole bag.
Dinner - meatballs and coleslaw.
Snack - jello with mascarpone cheese.

I made gelatin last night with the koolaid powder. I didn't add quite enough sweetener but it is still good. I used half a packet of koolaid, 3 tablespoons gelatin, 3 cups of water, 1/2 cup erythritol, and 1/2 teaspoon stevia powder. Next time I'll use more stevia or add liquid sucralose. Eating a big bowl of gelatin with mascarpone cheese after dinner kept me from snacking all evening.

I found an interesting blog post about cooking with olive oil: Is it safe to cook with olive oil?I've been using olive oil and butter when making scrambled eggs. I had some doubts about heating olive oil, but figured it was okay since I use very low heat to cook eggs. It's nice to see the science backs me up on this.

Bunniee, that's good to know about olive oil. I use coconut oil when I can, but I don't always want the flavor of coconut, so it's good to know that olive is an option for more than just salad dressing.

Good morning! I'm here and on track. Didn't go to bed on time last night, so I'm pretty tired this morning.
So I've not been tracking for a couple of days and the scale is eeking back up. I'm going to get back in gear today!
Can someone tell me the recipe for the gelatin again please? I'd love to have that in the evening too!

Did you like it as well as store bought sugar free? The taste is similar when I get the sweetness right, and I think the texture of homemade gelatin is actually better. A bit softer and not so rubbery. Making gelatin is also the first time I've had success getting erythritol to dissolve completely and not be grainy. Bunniee, that's good to know about olive oil. Yeah, I like the taste of coconut oil but not with eggs!

Today's log - 1850 calories, 123 g protein, 129 g fat, 60 g carbs. I know it looks like a lot of carbs but the total includes 27 g of fiber and sugar alcohols.
Breakfast - scrambled eggs, bacon, flax wrap. Coffee with hwc.
Lunch - chicken salad, tortilla chips
Snack - Quest bar
Dinner - bunless cheeseburger and pickles
Snack - gelatin

I weighed today and was up higher than before. 169.5. I have been on plan all week and all last week. I am sore from running sprints but other than that I just don't know. Guess my body just wants to be fat. Lol, sad part is I wasn't satisfied at 148 but would love to be back there now. Oh well, still gonna be a beautiful day.

Keep swinging at it Cheryl. Your body will eventually respond. Make incremental changes as it seems wise. I told my sister last weekend I am feeling better, more able to manage a day in good emotional/mental health. I couldn't attribute it to longer days, warmer days, a good season for my hormones, or my LCHF way of eating. Too many variables to say "Ah! That's it!" I know it would feel better if I moved my body about every other day or so. It's coming I am sure. I continue to make gelatin daily. I make a batch that includes 4T of gelatin and I eat that in one day. I fiddle with the essential oils I put in them. I still prefer the citrus ones right now. I've started a bunch of bone broth. Mine ususally doesn't gel, which doesn't bother me because I usually drink it. This batch I will attempt this: www.realfoodcarolyn.com/broth-blocks-snack/. Won't be chicken broth this time, though. Beef.

And quite frankly, I'm not a nice person if I can't have the occasional Chinese food (Taco Bell, French Fry, Ice Cream... ah - all things high carb) binge.
