Strange thing is I have not had any lc flu symptoms at all. My carbs were not over 100a day I am pretty sure so maybe that is why. Hard to believe I gained that much dang weight though. I figured since I had gained so much I was in for some lc flu. Same for me - I didn't have "Atkins flu" going back down to <50g per day, and yet I gained weight and felt awful in that 50-100 range. Weird, huh?

Anyone using gelatin as a regular part of their health regimen? I sometimes eat sugar-free jello. Does that count? What are the health benefits of gelatin?

Yes, jello would count. The reported benefits of consuming gelatin regularly are numerous so they say. For bone health specifically I started making/consuming meat broths though I've fallen out of the habit in the past couple of months. I made the equivalent of gummy bears yesterday. I am not a great fan of that texture and these particular ones are too hard, not really chewy. I used xylitol for sweet and tangerine essential oil for flavor. These would be portable if I can get them where I enjoy eating them a little. I am not putting gelatin in foods though yet and it wouldn't mind that at all. I wouldn't mind having an improvement to my skin. Ha!

I've been reading about people using gelatin to break stalls as part of a LC diet. It's all the rage on the reddit keto board right now. I'm thinking of doing a weekend fat fast with mostly diet jello and cream cheese.

Thanks for the link about gelatin, Pam. I will check that out. I used to make bone broths years ago (as well as fermented vegetables, I was really into Nourishing Traditions at the time) but haven't done so in ages. I think that book does talk about the health benefits of gelatin, though I don't remember details, and that she even recommended adding powdered gelatin to soups and stews. I don't eat many soups or stews this time of year, though, so I'll probably just stick with the sugar-free jello, and hope that all the artificial colors, flavors, and sweeteners don't out-weight the benefits! I kind of like gummy candies - not my favorite but good every once in awhile. I haven't had any in ages because the sugar-free ones are made with maltitol, which I can't tolerate. I'd like to give that recipe a try, if you wouldn't mind pointing me to it (or I can probably find it with the help of google.)
I have to admit, I kind of forgot about ACV! I didn't really notice any measurable effects from it, so gradually just dropped it. I'd be willing to give it another shot, though. Do you feel like it's helping you?

Yesterday's exercise: Run Yesterday's food: 31c/44p/96f This was only about 1200 calories, which is pretty low for me. I'm not sure why, I wasn't trying to restrict. I'll probably more than make up for it today!
Weigh-in this morning was 132.0, which is goal weight! But I'm having a hard time believing I could have hit goal THAT quickly, so I'm expecting some "rebound" tomorrow and a bit of bouncing around before it settles in.

I added plain gelatin to my coffee this morning along with coconut oil and hwc. I've tried blending it in protein shakes before, but the gelatin I got doesn't dissolve well in cold liquid. I had a craving for egg salad and made a batch for lunch today. I tried the hot start method of boiling eggs after reading about it online, and it worked out great. I used a steamer insert to keep the eggs from rolling around in the pot, steamed the eggs for 10 minutes, then let them cool in ice water for 15 minutes before peeling. They were cooked perfectly and so easy to peel. The hard truth about boiled eggs.

I love egg salad with diced Mezzetta "tamed" jalapeños in it. Yum!

I use the gelatin. I have slacked off lately. My skin and nails are much healthier when I use it.
I found a blood glucose monitor this morning at a yard sale. It was brand new and had 18 sealed boxes of test strips and 8 boxes of sealed lancets with it. the lady wanted $5 but I gave her $10 which was still not enough. It is a Gmate monitor that talks and it works great. Still had the plastic cover on it too.

As far as gelatin, I did try a teaspoon in coffee this morning. It's okay. Doesn't change the coffee much--which I didn't want it to. As far as ACV, wasn't expecting any overnight results and I haven't had any either. I don't eat a lot of fermented food so this helps with digestion and the like. I do not have outward signs of digestive problems, other than a super slow elimination time. Congrats on the scale being good to you Gretalyn!
I found that particular page about health benefits and the long list of recipes after I had made mine. I had to guess amounts because the recipes found before were about mixing packets of this and that. I used xylitol and gelatin bulk. I have already spotted in the that provided list gummy type recipes that use bulk items. Yea!

87 is very good.
Using the gelatin recipe for sour gummies in that list, I made some with xylitol, gelatin, lemon essential oil and lime essential oil. Very tasty. Almost addicting--it's the xylitol I am sure. The proportions worked well.

Yesterday's exercise: my barre instructor is out of town so I did a Ballet Body workout at home instead (http://www.leahsaragofitness.com) Yesterday's food: 50c/83p/152f (not my best day, reached the upper limit of where I should be on carbs)
Today's weigh in: 133.4 So I got a bounce as I expected, but that's okay. It's normal for me to bounce around 132-133 anyway. I just prefer to stay under 135.

I also got mascarpone cream, which is really nice with gelatin.

It was something crazy like 1 jello and 6 gelatin packets. I don't know where that one is....I freestyled it since I used bulk and didn't like the outcome much. I am sure that was about me.
Mascarpone is the European version of cream cheese. I didn't use it in anything having to do with gelatin.

Well, one packet of koolaid makes 2 quarts so I figure I'll either use half or make a double batch of gelatin. 1 tablespoon of gelatin powder for each cup of liquid is usually enough to make it gel, more will make it firmer. I usually just spoon mascarpone cream on top of gelatin, like whipped cream. It's kind of like sour cream without the tang.

Yeah, after I posted I remembered that one kool-aid packet makes a LOT of kool-aid! I'm curious now if I can even buy mascarpone around here. I'll have to keep an eye out for it. Yesterday's exercise: none, Sunday is my scheduled rest day. Food: 33/74/144 Weight today: 134.0 Still climbing a bit. Oh well. My average weight last week was 135. Still hopeful for a lower overal average this week.

I hosted book club last week and one of the women brought a dessert that included mascarpone--she hadn't heard of it before. She found it in the "fancy" cheese section of her store. You might find it where is the regular cream cheese occasionally. I chose not to weigh this morning. Mom did lots of coughing last night which kept waking me up. Not good sleep = weird weigh ins. I looked up your Ballet Body lady. She's got a channel on YouTube with some free videos. I may give those a look for when I am thinking "I ought to move around a little."

Oops I reported earlier I had used the sour gummie recipe. It was actually the lemon gelatin one I was following. I didn't use the lemon juice; only lemon essential oil and lime essential oil. I used bulk xylitol instead of honey. I am making more today.

I looked up your Ballet Body lady. She's got a channel on YouTube with some free videos. I may give those a look for when I am thinking "I ought to move around a little." When I first found her website, she had a video called "Express Thigh Workout" available to download for free. That's been quite some time, so that may have changed, but if you can find that one, it's a good one. It's only a ten-minute workout, but it will leave your quads shaking! (Well, unless you are stronger than I am, which is entirely possible!). I liked it so much that I bought a couple of other ones. I don't know if all of her workouts are this way, but the ones I have purchased are all short but intense. I like that.

I have been making these fermented pickles and they are the best salt/dill pickles I ever had. They are crisp, I hate mushy pickles. I have been using Himalayan salt, hopefully that means more minerals in the pickles but I know it taste great. They are so easy to make. I have been buying the cucumbers but I have plants coming in so I hope to have tons of pickles.

Hi everyone....thanks to Pam for reminding me to check in!! I'm here and on plan. YAY. Today I've had a tough time with my mind wandering to lots of yummy carbs, but I've done okay. I've been on plan for a week or so, I guess, so I'm not sure why today is so rough. Weigh-in today was 161.2. Last Thursday, I did drop down to 159.0, so I'm a bit frustrated with the scale these past couple of days. Trying to just keep my mind off that so I can stay on plan!! Fun reading all of your posts for the month. I have gelatin in my cupboard, not being used/eaten, so that topic is interesting. YUM on the pickles, Cheryl. I have a jar of homemade pickles in my fridge that a friend gave to me. First homemade ones I've had and I absolutely love them! Kristin
