Hey kids. We'll be getting a real wheelchair today. Will also try to shampoo my hair. Slept in our bed for the first time since the fall last tuesday. Will need to make some more modifications for a better fit, but it did feel nice to be out of the living room. Found a nearly new commode on craigslist we've phoned on so that it can be near me where ever I am and then maybe he can leave me for a bit once in a while. First doctor appt is 0810 wednesday. Due to my severe pustular psoriasis on that foot, nearly the whole foot, they did not cast, per se. Think they are going to redo what ever this stuff is weekly. Hoping the titanium will not be an issue for this body as I have metal allergies to nearly everything. One specialist said plates/screws stay for a year, another said 18 to 24 mos.
Ketones were down to .8 this morning but I did eat pretty good yesterday. Not weighing food or myself right now. Just trying to practice LCHF WOE. Had my LCHF green smoothie for breakfast. Will have a BPC for lunch with some protein, probably chicken. Not sure about supper yet.
Ok. Enough of being upright without the leg elevated. Will check in again later.

Weigh-in this morning 183.0 and down point three. Mostly treading water this week on weight but that is not atypical for me and it has been a life stuff high anxiety week for sure

I had some kimchi today. It's been about 20 years since I last ate any I do believe. I grew to love the stuff about 30 years ago when I was stationed in Korea in the Army. The only brand the Ablertson's I visited had was Tong Dae Chun Tong Bae Chu. It is good but zero spiciness. And expensive as all get out too. It was about $6 for a 16 oz jar. Ridiculous. I remember 20 to 25 years ago a good store bought brand was King brand.
I wasn't sure if I'd still like it. The first time I ever smelled it in Korea I thought a sewer line had broken lol.
Maybe I'll take a stab at homemade. I'd really like to start incorporating fermented foods in my way of eating.

I made some kimchi a few months back. I didn't have fish sauce but I loved what I made. I make my own sauerkraut too. My favorite is home fermented jalapeños. OMG they are so delicious. When I made the jalapeños I ran my hubby outta the house. No one else will eat them. They were so easy too. When I open the kimchi my daycare kids cry ,no kidding, one of them gets so mad. It's all really easy to make. especially with my super awesome food processor.

I will see f I can find the one I went by. I just threw things I had in the kimchi.
I didn't have a recipe for the jalapeños. I lucked up at the local run in, they had several big bags of jalapeños marked at a dollar each. I used the same brine solution that I used for the pickles, I posted that recipe a while back. I got 5 quarts of jalapeños, that is a lot of jalapeños. I shook as many of the seeds out as I could and they were still plenty hot. Running all those jalapeños thru the food processor was pretty rough on the sinuses. I will make sure I am the only one home next time. Lol

I did it on a Saturday morning. I used the slicer blade and sliced them all up. They cane out perfect little slices just like you would buy sliced jalapeños. I bet you could also just poke a hole in each jalapeño with a toothpick and pickle them whole if you prefer.

I was thinking you'd made some sort of relish out of them. Yeah, I'd do them whole but I think I'd have to slice the top off and core them. Jalapenos, around here at least, are very hit or miss on the heat with them frequently being way too hot with the seeds left in although I really love eating them whole seeds and all. *That* ran Rich out? Were they eye burning spicy or does Rich not care for spicy stuff at all?

reddarin do you like sauerkraut? Home fermented is very different than store bought. It is way easier than kimchi and might be a good place to start since you haven't fermented before. I will put the directions in the recipe section.

I have a super duper Wonder Twins power activate sense of smell and I *hated* it when he and mom would eat that crap. I'd leave the house lol. But that was a long, long time ago and there were a ton of things I couldn't stand when I was young. Like green beans cooked in a pot with a little bacon or ham and new potatoes. Can you believe that??? And it seems like fermented foods are really hitting their stride in the non-mainstream way of eating community because lately I've listened to several podcasts that touched on them. So I think I'd like to try sauerkraut

Yes it was awful, they were dang hot in the first place, sometimes they hardly have any heat. Slicing 5 quarts of them in that electric processor really got all that capsaicin in the air, lol, it was like pepper spray I guess. Made you really cough and burned our eyes. I kinda felt stupid for running everyone out of the house. But man I like the pickled jalapeños so I would do it again, I will just be more careful and not do so many at once, probably. Lol

Weigh-in this morning 182.3 and down point seven. Lessee. 4oz of kimchi got me point seven. I calculate that if I eat 70oz of kimchi today I should hit goal tomorrow

Good morning NKE-ers. I had a perfectly lovely 3 day weekend. I’m down from my Friday weigh in and my feet and ankles are no longer swollen. Yay! I’m still 6# up from my lowest before my Chicago trip early September but I keep going down and I’ll take it! Monday’s # Cals 1000 Fat: 57.19 Carbs: 27.73 Prot: 27.30 Found out Friday and reconfirmed today that I will most likely be taking on higher responsibilities at work. If voting goes as planned, I will not only be the Office Manager/Bookkeeper, I will become a member of our Executive board with check signing capabilities. Oooooooo. I’m cool!

Weigh-in this morning 181.9 and down point four. Frankly I'm a bit surprised. Yesterday was stressful to say the least. But I did fast all day after my morning liquid calories (CO/HWC). I'm also a little bit surprised how well IF is working for me this time around.

Weight up a little bit. Kinda felt it this morning. No noticeable bloating, but felt dense. Numbers and food were just "off" yesterday. Egg salad sandwich for lunch and cheese and spinach dip for dinner. I need to focus on animal protein today. I fell asleep on the couch again so not in bed until after 1 then slept past the alarm-thank goodness DH woke me!
DS & cub scouts went to driving range last night. So much fun!
It's raining here. Really raining. You'd think the drivers around here think it's the apocalypse. Just drive people!
