I find that if I weigh every day I get frustrated when the numbers go up even though I've been "good".
Plus, I'm not losing as quickly as I did last time or as quickly as most people seem to when they're really following the plan. If I remind myself of that every day I'm much more likely to give it up...

I weigh once a week. I know there's advantages to weighing daily, but seeing the bounces kind of drove me nuts. The downside to weekly weigh-ins is that I may get on the scale on a day when my weight has gone up temporarily. The way I look at it, by the next week or so any bounce will have sorted itself out if I'm sticking to my plan.

Since it fluctuates from day to day, I like to weigh daily, but then take an average for the entire week and log that as my "real" weight.
