Here are my notes from watching Dr. Westman on Duke's "Office Hours" interview series on Jan 9. 2012. I enjoyed the interview, and I learned some good stuff.
-Eggs are nutritionally complete. Volek has shown that the more eggs you eat, the more HDL goes up (which is good for CHO).
-Eating fat helps you burn fat because it revs up the enzymes that have to do with fat burning in your body.
-Low fat/high carb can work if you have that kind of metabolism, with exercise. But it is estimated that for 2/3 of Americans , it is a recipe for diabetes and obesity because of their kind of metabolism.
--It is safe to stay in ketosis/nutritional ketosis forever. There will be no ketones in your urine if you are using all of them for fuel. Ketones mean you're burning fat for fuel.
(my note--- so this suggests that blood ketone readings are valid after ketoadaption, whereas urine ketone levels will be inconclusive because they measure the ketones you waste because you're not burning them all)
-STALLS
-meds can cause stalls. A bioimpedence scale is a better indicator than a regular scale because it shows body composition including water content.
-Although salt is recommended, heart/BP patients must be guided by their doctors.
-STALLS PART 2
This part is tricky-- the talk was about Atkins, but the diet Westman uses (Dr. Westman speaks about No Sugar No Starch) was referenced in the talk, too. They are very very similar, but Westman says there is no need to climb the carb ladder. (another note-- recall that Westman, Phinney, and Volek are the authors of the most recent Atkins plan). So I reason that 'the diet' means VLC (20 total carbs) with adequate protein and fat as desired.
(The diet) isn't a weight loss diet. It's just healthy eating. It's been known as a weight loss diet because so many people had extra weight. The diet just allows your body to notice that it has extra fat on it. So the carbs and the insulin kind of hides the fat so your body can't use it for fuel. And so if you have extra weight, you cut the carbs out of the diet. You'll use that body fat, so people assume that it's a weight loss diet. But it does a lot more than that.
-1-2 lbs per week loss is good. Westman keeps his patients at induction levels forever if they need it.
-1st week you need bouillon/salt. Cures headache in 30 min. How it works is that it shifts water around.
-If you don't eat carbs, you're in fat-burning mode all day.
(my note--- this suggests that for maintaining, we can add back carbs as tolerated.) Also, Westman said that persons who exercise heavily might need to supplement with carbs for the energy, to be burned during intense exercise. (But Phinney refutes this somewhat. Puzzling.)
Second time around---
-Atkins doesn't work as well in later attempts because we're older. Metabolism lowers by about 100 calories per day per decade.
Why Total carbs instead of net?
-fiber may not be absorbed. But some fiber CAN raise blood sugar (he cites Joanne L Slavin as a fiber expert).
-"a lot of people can absorb fiber"
-you must limit blood sugar after meals
(my note: so fiber-eating/counting sounds like an individual thing. post-meal glucose testing would seem to be useful)
Westman loves Wendy's Baconator.
He doesn't say to count calories because people on the diet eat less because they don't have hunger. You're burning fat, so there's no hunger---you're burning your own battery pack.
